This is such a fresh everyday dressing for any salad. It adds the perfect amount of spice from the onion and tang from the vinegar. This vinaigrette reminds me of the salad dressings we enjoyed in Italy.

- ¼ red onion
- 3 cloves of garlic
- Juice of 1 lemon
- 2 tbsp. olive oil
- 1 tsp. balsamic vinegar
- 2 tbsp. water
- Salt and pepper
1. Make dressing by blitzing ingredients into a high powered blender until smooth (30sec/speed10) and transfer into a glass bottle,
*Dressing will keep in the fridge for up to 2 weeks.
