This is my go-to salad when attending any BBQ, get together or entertaining. The flavors are a winning combination and the pumpkin and chickpeas make it satisfying and delicious. It’s very simple to prepare and the flavours actually get better as it rests.

The watercress also adds a refined element to this simple salad. You can mix this up by adding avocado, cherry tomatos or walnuts too.

Chickpeas are one of our favourite legumes as they contain several key vitamins and minerals. They are also high in fiber, carbohydrates and protein. We often find if we are feeling a bit flat, it’s often because we haven’t been getting enough legumes; they really make you feel fantastic.

  • ½ jap pumpkin (chopped into small pieces)
  • 2 cans of chickpeas (rinsed and drained)
  • ½ red onion (diced)
  • 1 packet of watercress salad
  • 1 tsp. maple syrup
  • 1 tsp. coconut oil
  • 1 tsp. season all (or BBQ seasoning)
  • 1 tsp. smoked paprika
  • A pinch of chilli powder
  • Salt and pepper


  1. Pre heat oven to 180’c fan forced
  2. Dice pumpkin and transfer on to a lined baking tray. Rinse and drain chickpeas and pat dry with a piece of paper towel. Lay out on to a separate tray.
  3. Season the pumpkin and chickpeas with coconut oil, maple syrup, season all, smoked paprika, chili powder, salt and pepper and bake pumpkin for 30mins until tender and chickpeas 15mins or until crispy.
  4. Once cooked, remove from oven and allow to cool.
  5. Dice onion and wash and drain watercress salad. Set aside into a large salad bowl.
  6. Once pumpkin and chickpeas are cooled, add them to the salad bowl and gently toss through.

*We tend not to use a dressing with this as the seasoning from the pumpkin and chickpeas marinates through the salad. However you could just use a drizzle of olive oil or a dash of apple cider vinegar.
