This is the perfect accompaniment to any summer dish. We love to serve this with potato fries, eggplant parmas and even BBQ tofu skewers. You can mix this up with whatever salad ingredients you like, but this is a fabulous mix of fresh, crunchy, sweet, refreshing and tangy.
The red onion vinaigrette is a twist on traditional vinaigrette and pairs perfectly with any salad.

- 2 tomatoes (wedges)
- ½ cucumber (sliced)
- 3 cups of mixed lettuce
- ¾ red onion (sliced)
RED ONION VINEGARETTE
- ¼ red onion
- 3 cloves of garlic
- Juice of 1 lemon
- 2 tbsp. olive oil
- 1 tsp. balsamic vinegar
- 2 tbsp. water
- Salt and pepper
- Prepare salad ingredients by slicing cucumber, onions, wedging tomatoes. Toss through mixed lettuce
Make dressing by blitzing ingredients into a high powered blender until smooth (30sec/speed10) and transfer into a glass bottle,
*Dressing will keep in the fridge for up to 2 weeks.
