My mum was the ANZAC Day biscuit queen! Every year to celebrate our soldiers, she'd make batches of these patriotic bickies that were the perfect blend of sweet, gooey on the inside and crisp on the outer. Well I wanted to follow in mum's tradition, only our oven decided to blow up a few weeks ago! So raw ANZAC Day Bliss Balls it is, and what a delicious inconvenience this was.
For those who aren't familiar, ANZAC day biscuits are a blend of oats, coconut and maple syrup or honey. I've recreated those flavours by substituting the honey for rice malt syrup which is what also gives the balls their stickiness. They are a great after dinner treat or served as an afternoon snack to give you an energy boost.

- 1 cup oats
- 1 cup desiccated coconut
- 1 cup walnuts
- 4 medjool dates
- 2 tbsp. rice malt syrup
- 1 tbsp. macadamia butter (or coconut oil)
- Blend on medium speed for 10sec (10sec, speed 5)
- Roll into balls
